The estate and the wine Founded in 2009 on the slopes of Vergisson and Davayé, Domaine David Bienfait embodies the passion and dedication of this young winemaker. With just 6 hectares, he brings out the full beauty of southern Burgundy, producing wines from Pouilly, Saint-Véran, and Mâcon-Villages.
Wine From south-facing old vines planted in 1940 on the Vergisson terroir, the 2023 White Pouilly-Fuissé gains an undeniable extra dimension. Aged for a year in barrels, it beautifully captures the ripe character of the harvest, with a dominant minerality, a hint of creamy vanilla, and fresh, lively citrus notes. On the palate, it reveals richness and depth without excess, striking a perfect balance with just the right concentration and a refined touch of bitterness on the finish. This is a remarkable bottle with the potential to age gracefully for 6 to 8 years. Rated 93/100 by the Selection Committee.
Vinification Manual harvest, followed by a slow and gentle whole-cluster pressing. Sixty percent of the harvest is vinified in oak barrels that have held 3 to 4 wines, aging for 11 months, while the remaining 40% is aged in tanks. Alcoholic fermentation is temperature-controlled and lasts for 2 to 3 months.
