Now one of the most respected winemakers in Provence, Dominique Hauvette’s influence extends far beyond the region. Named Winemaker of the Year 2020 by RVF, she is an iconic figure whose talent and vision leave a lasting impression.
Wine The 2023 Red Roucas from IGP Alpilles is a blend carefully assembled by Dominique Hauvette to deliver a wine with striking sapidity and character, built on Syrah, Grenache, Cabernet Sauvignon, and Cinsault. From the first aromas, it charms with notes of stone fruit, subtly infused layers of abundant dark fruit, and smoky, spicy undertones. Its vibrant energy and finely etched tannins speak to an unmistakable style—crafted from early-harvested grapes and a gentle infusion. This is a wine of exceptional freshness and impressive length. It pairs beautifully with refined meats like veal, lacquered duck, or pork belly. A bottle with great aging potential, promising to evolve gracefully over the next five to ten years. Vinification Hand harvested, destemmed, macerated in wooden truncated cone-shaped vats and stainless steel vats with daily gentle punching down, wine left to ferment for 2 to 3 weeks. Aged for one year in 30hl casks and stainless steel vats.
