The estate and the wine
The estate and the wine This is a rare estate, one few have the privilege to access. Philippe Pacalet is a deeply sensitive winemaker who captures the essence of Burgundy with remarkable precision and elegance, using the most natural methods possible—whole-cluster fermentation, no added sulfur, and extended aging.

Following in the footsteps of his mentors Marcel Lapierre and Jules Chauvet, he crafts wines under organic practices, balancing technical mastery with pure aesthetics. Each bottle is a true reflection of the great Burgundian terroirs he has explored for more than twenty years.

Awarded 2 stars by the French wine guide RVF, his exquisite wines—renowned for their silky texture and incomparable precision—are among the most sought-after in their appellations.
Wine The 2021 White Meursault reveals itself with smoothness and charm, offering generous notes of hazelnut and white fruit flavors. It also delivers a vibrant freshness, leading to a finish that blends subtle salinity with fine, elegant bitterness. A flawless example of a classic village Meursault.
Vinification Hand harvested from the ‘Les Vireuils du Dessus’ and ‘Les Grands Charrons’ vineyards, with vines averaging 45 years old. Whole grapes are pressed, with a light settling followed by immediate transfer to vats. Alcoholic fermentation with indigenous yeasts and malolactic fermentation in vats. Aged on lees, known as ‘en réduction’ without racking, with stirring and no added sulphites for 13 months. Bottled in November 2022. Production: 1,544 bottles.
