Wine:

Crafted from the 2020 harvest and enhanced by a quarter of reserve wines,  N°748 Extra-Brut White Champagne rises well above its category, shining with precision and balance. Its aromatic clarity—melding chalky nuances with hints of almond paste and candied quince—pairs beautifully with its remarkable finesse and silky, cloud-like texture. The long finish, marked by notes of hazelnut, speaks to the perfectly judged partial aging in oak. This is a Champagne of clarity and depth, built for both fine dining and cellaring. In Magnum format, its potential is magnified — delivering even greater aging capacity and maximum enjoyment. A truly exceptional Champagne that outclasses its peers.

Vinification:

Hand harvested, from the 2020 harvest + 24% reserve wines made up of wines n°747 to 743 and wine n°741. Extra Brut. Dosage: 2g/l

Color:

Golden in colour with a delicate, intense and exceptionally regular bubble formation.

Nose:

A great aromatic purity marked by chalky notes and subtle hints of marzipan and candied quince.

Palate:

A lively champagne with remarkably fine bubbles, giving it a soft, airy texture. The salinity, enhanced by lingering aromas, is the mark of perfectly controlled ageing.

Temperature:

Serve between 8 and 10°C.

Food and wine pairing:

A gourmet champagne that pairs perfectly with a plate of Pata Negra Iberian ham or grilled toast topped with salmon roe and thick cream, or with noble fish such as féra or Arctic char in a creamy sauce with fir buds.
