Wine:

The 2020 Château Cheval Blanc, with 65% Merlot and 30% Cabernet Franc, once again proves its brilliance. Rated 98/100 by critic Michel Bettane, it is intense, generous, and highly expressive, revealing layers of black fruit and spice. Its structure is textbook perfection—powerful, dense tannins that will soften and integrate beautifully with ageing.

Vinification:

Hand harvested. Plot-based wine, indigenous yeasts, gentle extraction, long maturation, manual pumping over, only one delestage during the 4 weeks of wine production. Malolactic fermentation in vats then aged for 16 months in new barrels. Bottled on 7 July 2022.

Temperature:

Serve between 14 and 16°C in a large glass.

Food and wine pairing:

Quail with figs, Quercy lamb rubbed with rosemary, roast beef ribs in a herb crust.

Located in the north of Saint-Émilion, near the Pomerol border, its 39-hectare vineyard stands apart with an unusually high proportion of Cabernet Franc (52%)—a rarity for the appellation—complemented by Merlot (43%) and Cabernet Sauvignon.
