The 2023 White Pouilly-Fuissé marks the first vintage of this cuvée. Aged entirely in barrels, it offers a wine of impressive depth and structure, with a saline edge, freshness, and delicate bitter notes that add complexity. A textbook example of the appellation—rich, refined, and irresistibly balanced. Rated 94/100 by the Selection Committee.Vinification:
Hand harvested. Pressing of the fresh grapes after they have been in a cold room. Separation of the juices (setting aside the delicate pressings). Aged for 12 months in demi-muids (400 to 500 litres). Bottled in October 2024 at the Clos. Production of 2,800 bottles.Color:

David and Sophie Devynck have breathed new life into 4 hectares of very old vines in some of southern Burgundy’s finest terroirs. Their Clos Sauvage is a hidden gem—an untouched enclave perched at 450 meters altitude, where granite soils dusted with clay and limestone, farmed organically, give rise to wines of intensity, purity, and authenticity.
In 2023, they expanded their vineyards by acquiring an adjoining parcel in Chasselas, Saint-Véran, once owned by the late Denis Jeandeau. These remarkable soils now carry on his legacy, reinterpreted through fresh eyes, yielding wines of exceptional elegance and depth.
