Wine:
The 2021 white Saint-Véran is a fresh and charming wine. The maturation without the addition of wood gives it an energetic and lively structure that brings it closer to a Pouilly-fuissé; the tension and the roundness are perfectly combined with ripe aromas of fruit and a radiant floral tone. This is a beautifully taut Chardonnay, with ripeness on the edge but which gives it relief and dynamism; a wine that is not at all extravagant! Ideal at the beginning of a meal, with dry cheeses or seafood.Vinification:
Purchase of grapes from regular and monitored wine growers.Slow pressing, 6 to 8 months maturation in vats.
