Wine:

Always subtle, with a deep sense of sensuality, the 2017 Château Pavie Saint-Émilion Grand Cru Red reaches a rare level of freshness and purity in this vintage. Its brilliance, depth, and finesse stand in contrast to the tighter, more forceful style of earlier years. The barrel aging—used here to gently round out the wine and add layers of complexity—feels more restrained, and perfectly judged. In this vintage, it remains one of the must-haves of the appellation, if not of all Bordeaux. Rated 99/100 by Parker.

Vinification:

Hand harvested. Fermentation for 38 days in temperature-controlled wooden vats, followed by ageing in barrels. 80% aged in new barrels and 20% in barrels that have previously contained wine.

Nose:

Indulgent with notes of black berries and pastries, a subtle floral scent of violet reveals a spicy bouquet.

Palate:

Full-bodied and powerful, the initial taste is clean and sustained with velvety tannins and a fantastic length on the palate. What a gem!

Serve at 16 to 18°C.
