Wine:

From just 33 ares, the 2022 white Chablis 1er Cru Vaulorent offers impressive breadth and a smooth texture, creating a restrained and distinguished whole that is long and finely chiseled with a chalky grain. It is certainly the most complete of the premiers crus, with a broad saline finish that resonates for a long time. Between fullness and depth of flavors, this is an authentic Chablis, ready for long aging.

Vinification:

Hand harvested. 0.3345 ha, south-east exposure, vines averaging 45 years old. Fermented with indigenous yeasts and aged for 8 to 10 months, partly in stainless-steel vats and partly in barrels, with systematic malolactic fermentation. Production of 2,500 bottles.

Temperature:

À servir entre 10 et 12°C dans un verre grand format.

Food and wine pairing:

Seafood platter, shellfish, pike-perch with beurre blanc, roast free-range poultry.

Cellar aging:

From now until 2034, and even longer for enthusiasts.

Rated 3 stars in the RVF Guide and an undisputed signature of Chablis, Domaine Jean-Paul et Benoît Droin boasts a magnificent heritage of vines, including five of the seven grands crus, among them the very rare Grenouille. These splendid terroirs lay the foundation for a precise and meticulous range, without a single false note.

With perfect ripeness, the wines exhibit a confident power, generous and precise, endowed with a masterful balance, remarkably well-structured and built for aging.

These wines are the work of Benoît Droin, who has been at the helm for 25 years, maintaining the same rigor and uncompromising standards. Despite their reasonable prices—and the fact that the domain has nothing left to sell—they are among the must-haves of Chablis, if not beyond.
