Wine:

The 2023 Red Chorey-lès-Beaune Vieilles Vignes is a beautiful tribute to Pinot Noir, showcasing pure, expressive fruit—think ripe cherry, wild strawberry, and a hint of raspberry—all brought to life by a vintage that combines freshness with ripeness. Aged with 20% new oak, the wine gains subtle layers of spice and texture, enhancing the body without masking its natural finesse. A graceful, well-balanced bottle, perfect with a classic pot-au-feu or a beef carpaccio. Drink now or cellar for 5 to 8 years.

Vinification:

Hand harvested. Fermented for 15 days with punching down. Aged in barrels, 20% of which are new.

Certified organic wine from a Level 3 High Environmental Value (HVE) farm.

Brilliant ruby, with a beautiful intensity.

Nose:

Aromas of red fruits and raspberries mixed with floral notes.

Palate:

The palate is precise and expressive, driven by a harmonious blend of ripe yet fresh fruit flavours—white peach, lemon curd, and a touch of nectarine. The wine is aged in 350-liter barrels, with just the right amount of new oak to bring subtle notes of spice and roundness, without overpowering the purity of the fruit. The texture unfolds with elegance and ease, showcasing a radiant, finely balanced cuvée.

Temperature:

Serve between 14 and 16°C in a large glass.

Aperitif, hare terrine, pâté en croûte, beef carpaccio, pot au feu, pan-fried entrecôte, roast guinea fowl.

From today until 2032.
