Wine:
The 2021 Saumur Brut from Clos de l’Ecotard, made mostly from chenin blanc with touches of grolleau gris and cabernet franc from vineyards in organic conversion, charms with its traditional-method craftsmanship. A generous 24 months on lees and zero dosage give its pale golden bubbles a lively, energetic sparkle, making it the perfect choice for a celebratory aperitif. The subtle addition of the red varieties brings a hint of roundness. Produced in limited quantities, this Saumur Brut combines elegance with easy appeal, promising a sparkling experience to remember. In magnum format, the enjoyment is multiplied.Vinification:
