Wine:

The latest addition to the estate, the 2021 white Savennières Clos de la Coulée de Serrant once again asserts its singular character around finely oxidative notes that will find a unique resonance over time. This is a wine that needs to be waited for, and not only cellared, but also aerated for a long time before serving. At this stage of youth, notes of beeswax, apricot and wheat emerge, which gradually evolve into very ripe, almost candied flavors of fruit. The palate oscillates with grace between freshness and delicate bitters, unfolding a supple, ample and long body, which ends on a vibrant and intense finish. All the markers of success are already here!

Vinification:

Hand harvested, vinification without chaptalization or relevurage, no temperature control, 1 to 2 rackings, bâtonnages, very light filtration called "pre-filtration", maturing in oak barrels for 6 to 8 months, new wood limited to 5%, light sulfiting before bottling.

Vineyard certified in organic and biodynamic agriculture since 1981.

Color:

Bright golden yellow.

Temperature:

To be served between 10 and 12°C.
Storage : The low level of sulfur or even the absence of sulfur at bottling requires storage in a cellar below 14°C to guarantee the quality and longevity of this wine.

Food and wine pairing:

Grand vin de gastronomie, white turbot with mousseline sauce, sole au gratin Fernand Point.

Cellar aging:

From now until 2040

One of the leading figures of biodynamic agriculture, Nicolas Joly is an emblematic winemaker of the Loire Valley. A great craftsman and true artist who creates great white wines capable of decades of aging, which earned him a second star in the RVF Green Guide.

Coulée de Serrant is the very best of his range, an icon of world viticulture and one of the greatest white wines in the world. Entirely biodynamic for the past 40 years, the estate produces the most complex and mysterious of wines, which only really reveals itself after several years of aging.
