Wine:

The 2019 white Vin de France Toison d’Or is a significant Pinot Gris, characterized by notes of white peach and apricot, with a lot of purity and restraint in its aging process that highlights the fruit well. The structure has tension, freshness, and a great depth of flavor, with a crisp and mouth-watering aspect of great finesse. It can be cellared for a few more years or paired with a cooked fish dish or even poultry.

Vinification:

Hand-picked, organic and biodynamic soil cultivation. No certification. Aged for 4 years.

Light gold.

Nose:

Lots of purity and freshness, underlined by aromas of white peach and hints of apricot. A wine with clean, precise aromas, supported by restrained ageing.

Palate:

Fine and elegant, this cuvée offers a pinot gris with a crisp, salivating appearance, revealing a mineral, chiseled mid-palate. An incomparable pinot!

Temperature:

Serve between 10 and 12°C.

Enjoy at the table, with shellfish in fine lemon butter, fish, shellfish, grilled sea bass...and with goat's cheese if you leave it in the cellar.
