Vinification:

Sandstone soil with a south/south-east orientation. 30hl/ha, manual harvesting in small crates, 70% destemmed, 30% whole. Fermentation between 25 and 30 degrees in 15 hl tuns with indigenous yeasts. Maceration for 30 days at medium temperature with manual punching down once a day. Pneumatic pressing. Matured for 10 months in tuns, then 10 months in amphorae and 4-6 months in bottles. No fining and no filtration.

Biodynamic certified wine.

Serve between 14 and 16°C in a large glass.
