Wine:
The 2023 Côtes du Rhône Vieilles Vignes Red is made from vines aged 30 to 70 years, half of which border the Châteauneuf-du-Pape appellation. It benefits from a gentle infusion and limited extraction. This style highlights a delicacy and elegant floral notes right from the first nose. We appreciate its smooth texture, airy feel, and perfect balance. The maturity of the old Grenache vines adds an extra layer of complexity. A particularly successful vintage, blending finesse, freshness, and depth.Vinification:
Hand harvested grapes. 100% fermentation in concrete wine. Aged 52% in concrete wine, 37% in casks, and 11% in barrels.Color:
Intense, brilliant purple-red/garnet.Nose:
A delicate, fresh nose with hints of strawberry, in an infused style marked by the beautiful imprint of the Grenache grape variety.Palate:
Delicately fragrant with perfectly integrated alcohol, offering great elegance and unpretentious drinkability.
Temperature:
Serve at 14–16°C.Food and wine pairing:
Hare saddle with thyme, roast Bresse pigeon with crushed black pepper, venison steak with red wine and porcini mushrooms.Cellar aging:
From now until 2028Clos du Mont-Olivet is one of the most coveted estates in the southern Rhône Valley. Firmly established in Châteauneuf-du-Pape and deeply tied to the Sabon family, its fifty hectares of vines are highly fragmented and rest on a unique patchwork of clay, quartz, and pebbles. This mosaic of soils produces wines built to age, marked by remarkable finesse and softness, designed to reveal their full depth over time.
